Prison City Brewing Expands Urban Farm Project

Auburn’s Prison City Brewing is expanding its Urban Farm Project with the purchase of hydroponic equipment from Strawberry Fields U-Pick Hydroponic Farm in Skaneateles.

In making the announcement, Prison City Brewing said this strategic move will bring the art of urban farming directly to its North Street location in Auburn, enhancing the brewery’s ongoing commitment to sustainability and local sourcing.

Owners Doug and Linda Eldred of Strawberry Fields have been pioneers in hydroponic farming, cultivating a variety of fruits and vegetables—including their renowned strawberries—in an accessible, soil-free environment. Their innovative approach has allowed for an extended growing season and made fresh produce available to the community from June through October.

Installation of the hydroponic systems is slated to begin in May, with plans to offer U-pick strawberries at the North Street location by the end of June. In addition to strawberries, Prison City Brewing will grow a range of fruits and vegetables that will be featured in seasonal beers and farm-to-table menu offerings.

“The North Street location was always intended to include urban farming—it just took us a few more years than anticipated!” says Dawn Schulz, co-owner of Prison City Brewing. “This project has been a long time coming, and we’re so excited to finally bring this vision to life.”

Schulz added this expansion aligns with Prison City Brewing’s mission to create a sustainable, community-focused brewery experience.
