With hunting seasons about to be in full swing, you may wonder what to do with your quarry other than freezing it.  Seneca County Cornell Cooperative Extension (SCCCE) is hosting a meat canning and jerky preparation workshop on Thursday, November 8th from 6-8PM in their office located on the 3rd floor of the Main Street Shop Centre in Waterloo.  Come learn the important science behind safely canning meat and making jerky.  There will be taste testing of prepared beef and participants will also learn how to preserve venison meat during this hands-on workshop.  A Master Food Preserver from Cornell Cooperative Extension will be leading the workshop.

“Living in the Finger Lakes region we are blessed with an abundant supply of locally raised and hunted meat.” stated SCCCE Nutrition Resource Educator Mo Tidball.  “And this workshop isn’t just for hunters. Canned food is important to have on hand if the power goes out.  Also, learning to safely can animal products may help you solve the problem of freezer space when considering buying local meat or hunting.”

If you would like more information about consuming wild game and fish, Seneca County CCE, in consultation with Cornell’s Department of Natural Resources, created an educational web resource to offer recipes, nutrition facts and information based on fish and game that is currently or soon to be in season.  The Wild Harvest Table website can be accessed at wildharvesttable.com.  If you are interested in purchasing a side of beef or other locally raised meat, a listing of local farms can be found in the “Experience the Farm” brochure available from Seneca CCE and also linked on their website; http://senecacountycce.org.
